Eye : This rosé champagne is a deep ruby colour and reminiscent of black grape jelly.

Nose : Full bodied and strong with hints of ripe black fruit (blackberries and blackcurrants) is a spicy note.

Mouth : Flexible, while featuring a nice tannic structure, but on silky tannins. The fruity character is present until the end of the mouth with a persistence of peony.

Served chilled, this rosé of maceration will be the perfect accompaniment to a monkfish cheek with citrus butter or a salmon steak with crushed sweet potato. It can also be enjoyed with a raspberry charlotte and its Champagne sabayon.
